Rappel sur le Pineau des Charentes :
Le Pineau des Charentes ou Pineau Charentais est un « vin de liqueur » dont les conditions d’obtention de l’A.O.C. sont régies par le décret du 12 octobre 1945. Un vin de liqueur est un vin dont les moûts sont mutés avec l’eau de vie locale. Il existe trois vins de liqueur porteurs d'AOC en France : le Floc de Gascogne muté à l’eau de vie d’Armagnac, la Macvin muté au marc du Jura et le Pineau des Charentes muté à l’eau de vie de Cognac. De plus, pour prétendre à l’Appellation Contrôlée, les moûts et l’eau de vie de mutage doivent provenir de la même propriété.
La région délimitée comprend la presque totalité du département de la Charente Maritime, une très grande partie du département de la Charente et quelques communes voisines des Deux-Sèvres et de la Dordogne.
Les cépages autorisés pour le Pineau blanc sont : Ugni-blanc – Colombard – Folle Blanche – Montils – Meslier – Saint François (appelé localement Blanc Ramé) Jurançon blanc – Sémillon – Sauvignon – Merlot blanc – Merlot Noir – Cabernet Franc – Cabernet Sauvignon.
Pour le Pineau rosé : Merlot Noir – Cabernet Franc – Cabernet Sauvignon – Malbec.
Le texte du décret est le suivant :
« Le Pineau des Charentes ne peut être élaboré que par les bouilleurs de crus individuels ou en coopérative de production avec les produits de leur récolte.
Les moûts doivent être utilisés pendant la période des vendanges sans aucun filtrage, ils peuvent avoir subi un début de fermentation mais ne doivent, au moment du mutage présenter une teneur en sucres non fermentés inférieure à 170 grammes par litre.
Après un pressurage léger des raisins, les moûts obtenus sont assemblés (mutés) à un Cognac rassis titrant au minimum 60 % d’alcool et doivent vieillir en fûts de chêne. Le Vin de liqueur obtenu doit présenté un TAV compris entre 16 et 22 % d’alcool et une teneur en sucres supérieure à 125 gramme par litre. »
Après ce mutage, les vins sont logés dans des contenants en bois où ils doivent séjourner un minimum de 14 mois pour le Pineau rosé et de 18 mois pour le Pineau blanc, laps de temps à l’issue duquel ils passent devant la commission d’agrément pour l’obtention de l’A.O.C.
Un Pineau Vieux doit séjourner plus de 5 ans en fûts et un Extra Vieux ou Très Vieux plus de 10 ans. Il est à noter que ces dénominations ne constituent pas des A.O.C., mais de simples mentions nécessitant malgré tout une dégustation d’agrément.

Le site de cet organisme officiel me semble quelque peu dépassé, puisqu’il recense, moteur de recherche à l’appui, 181 négociants et vignerons produisant du Pineau, et que seulement 2 des 10 lauréats d’Irexpo y figurent. A part cela, c’est un bon site de vulgarisation.

En 2003, je visitais la ferme ancestrale de mes ancêtres à Écoyeux, entre Saintes et Cognac. Je me suis rendu chez Jean-René Batard pour y acheter deux bouteilles de pineau. Et tous mes amis à Montréal n'ont que des éloges à faire concernant ces délicieuses boissons.
